Description: The SB Gyuto is my take on the ideal all purpose kitchen knife. A lot of time went into this design and I’m very happy with its performance. The blade shape is similar to a Japanese gyuto, I prefer this design for its downward point that allows you to get the full length of the blade to effectively put pressure down on the cutting board. The angled tip gives you enough of a point for scoring or piercing while having enough weight behind it to easily do any fine mincing, something I personally find K-tips or kiritsuke’s wanting for. The handle shape is very neutral and keeps the hand fatiguing over extended use.

This Gyuto is intended to be a true laser, featuring a super thin S grind meant to slice and dice like you had a lightsaber in the kitchen. The faux brute-de-forge finish leaves part of the hollow grind untouched to show off a clean belt satin finish in between the acid etch. An S grind like this requires a light touch on the users part, don't force the knife through the material and into the cutting board, just slide it and it'll glide right through. That will avoid chips and rolls in the delicate edge. Using it in this way will keep the blade razor sharp for a very long time. Coupled with a strop I can easily see this knife being sharp as a razor for months on end, even a year in home use. When it's time to sharpen, the S grind is so thin that you can remove chips with a 1k stone in 10 passes. Sounds crazy but its so fun to use!
